The Elon farmers’ market has had beautiful eggplant lately, so my mom shared one of her favorite recipes (from the May 2009 Cooking Light) with me. The Eggplant, Tomato, and Smoked Mozzarella Tart lets the fresh produce shine, and the wheat germ crust is a nice alternative to a more traditional pie dough.
