This weekend, my parents treated me to lunch at Colterra in Niwot, Colorado. The building has housed a number of enjoyable restaurants, and the latest venture features locally-sourced foods.
This visit, I enjoyed the Fall Vegetable Linguini with fresh pasta, roasted butternet and delicata squash, hazel dell mushrooms, chard, and parmigiano, finished with a sprinkle of parsley. The fresh, local ingredients blended in a beautiful symphony.
My dad tried the Ahi Tuna Niçoise Salad; the tuna was perfectly cooked and delicious.
My mom paired the roasted beet salad with the soup du jour, a curried pumpkin soup.
The service was a bit overbearing, but the food more than made up for it.
