Herb Update
The kitchen herbs are coming along well. Unfortunately, I had to spray the parsley to deal with a bug infestation, so I can’t use the parsley for a few weeks. I’ll be cooking with all of these soon, though!
Side Landscaping

Spinach Filling, Part 2
Since I used less than half of the spinach filling in my crepes, last night, I “recycled” the leftovers in tonight’s pasta dish. Peel and cube one medium sweet potato. Package in aluminum foil with a drizzle of olive oil and some freshly ground pepper and roast in a 350 degree oven for 20-30 minutes.

My dad left me crepes in the freezer after his last visit, and this spinach filling is one of my favorite crepe options. The recipe is easy and versatile. Thaw one package of frozen, chopped spinach. Spring Fever
We might not be ready to plant outdoors, but at least we can get a jump start on a few plants. The seed tray has marigolds and three types of peppers (1 hot, 1 belle, 1 mild ornamental). Bailey needed a break from playing outside, but he’s enjoying the promise of spring.
